Ana Castro

Sous Chef

Born and raised in Mexico City, she grew up with her grandmother, who played a crucial part in her culinary development by awakening her curiosity about not only the sourcing and preparation of food, but by showing her that a meal, however simple, is able to bring a family together and cure whatever ails the soul, if for one instant. Her love for food drove her to pursue a culinary education, on top of her bachelor's degree in Gastronomy, she attended Le Cordon Bleu where she was trained in classic French cuisine. Most notably she has worked with Chef Mikel Slonso of Biko in Mexico City, Chefs Stephan Ilnckyj & Kenneth Foong, both of Betony in New York and Chefs Kristen Essig & Michael Stoltzfus of Coquette in New Orleans. Ana has spent the last few years at Coquette and became a Co-Sous Chef there. She was a grant recipient of the Ment’ Or Grant (2017-2018) and has been nominated as a finalist for the James Beard Rising Star Chef Award (2019).
